55 days. Okra is a hot season vegetable that needs warm soil and warm nights to produce. From West African origin, okra is part of the hibiscus family, along with cotton and cocoa. Try to pick them when they are 2.5 to 3 inches long or they’ll get tough and fiborous. Okra is excellent for use in soups, stews, relishes & is delicious fried, but then again what isn’t. It has a natural thickening agent which aids in thickening gumbos.
