
Lemon
PERENNIAL. Part used: leaves. This member of the mint family has a strong lemon flavor and scent. Its botanical name is “Melissa” which is the greek word for bee. And bees just love it! It grows 2 to 3 feet tall. Can be used for baking, tea, or flavoring fish dishes. Try making a mock Lemonade: steep leaves in hot water until cool, add your sweetener of choice and refrigerate. Lemon balm is said to have a calming effect. Lemon balm dries well.
