42 days. Smooth leaf spinach. This variety is slower to bolt than any other variety. What does that mean, you say? When a plant “bolts” or sends up flower stalks in order to set seed its no longer putting energy into growing those tasty leaves we humans love so much. Hot weather causes a lot of plants to bolt. After a plant bolts its leaves loose their flavor.
